Orange Amaretto Biscotti

The aroma in my house is heavenly. As the weather turns colder, nothing warms you up like a cup of hot chocolate, tea or coffee, with a freshly baked biscotti. Traveling throughout Italy and neighbouring countries, my love for biscotti has grown over the years. It’s a baked delight that is hard to perfect, but once perfected, is a treat that you will love always. I’m happy to share a recipe from a dear friend of mine, Jodie. She is an amazing baker and we will continue to visit Jodie’s kitchen from time to time for some yummy treats. Perfect combo for me, I get to taste all her tasty treats and take pictures. This one is a keeper! I hope you will treasure it and share with your family for years to come.

Orange Amaretto BiscottiOrange Amaretto Biscotti

What you will need…
3 cups flour, plus a little more for dusting
4 teaspoons baking powder
1/2 teaspoon salt
Mix together, set aside

Next, you will need:
1 cup granulated sugar
6 tablespoons butter (room temperature)
3 eggs
1 cup chopped or sliced almonds, (I prefer toasted slightly to wake up the flavours)
Zest of 2 oranges
2 tablespoons freshly squeezed orange juice
2 tablespoons Amaretto liqueur

Ingredients for Orange Amaretto BiscottiMixing Steps:

  • Prepare orange rind, orange juice and amaretto in a glass and set aside
  • Cream sugar and butter with an electric mixer
  • Add the eggs, beat until fluffy
  • Add the almonds, juice, zest and liqueur until blended
  • Slowly add in the flour mixture until blended

Baking Preparation Steps:

  • Preheat oven to 350
  • Line a cookie sheet with wax paper (lightly dusted with flour)
  • Pour dough onto cookie sheet and form into 12×5 rectangle
  • Place in freezer for 30 min
  • Remove from freezer and transfer onto new sheet
  • Divide dough into 2 equal rectangles  leaving 2 inches of space between them
  • Bake for 30 minutes or until golden
  • Cool before cutting
  • Using a serrated knife, slice the loaf at a slight angle
  • Reduce heat to 325
  • Put the cut biscotti back on the baking sheet, on its side
  • Bake for an additional 25-30 min. Turning half way through to ensure they are baked on both sides
  • Let cool and enjoy
