Mason Jar Cupcakes: A Delectable Treat Anytime of Year!

As 2012 comes to a close, I wanted to share one last recipe with you all from my good friend Jodie.  While this is the perfect holiday dessert, it can also be a delightful treat any time of year and makes the perfect gift for your favorite person. Jodie’s kitchen visited us this holiday season and shared with us her secret behind Mason Jar Cupcakes, which essentially is chocolate cake, banana & peanut butter icing.  This recipe remains in my top 10 in terms of taste and presentation.  I hope you enjoy!

To start, you will want to wash 12 mason jars and dry well. You can find mason jars at any craft store.  After these are washed and dried, set them aside. To assemble the jars, bake cake in cupcake cups as directed, and prepare both icings. When the cupcakes are completely cool, simply layer them in the jars:
  • First Layer: Cupcake (trim cupcake if necessary)
  • Second Layer: Peanut butter icing
  • Third Layer:  Bottom half of cupcake
  • Fourth Layer:  Banana icing
  • Fifth Layer:  Top with mini Recess Peanut Butter Cup.

Jodie’s family recipe for Chocolate Cake:

  • 2/3 cups cocoa
  • 2-1/4 cups flour
  • 2 cups sugar
  • 1-1/2 tsp baking powder
  • 1-1/2 tsp baking soda
  • 3/4 teaspoon salt (optional)1 and 1/2 tsp instant coffee

Combine all above ingredients in food processor about 10 seconds, then add the following:

  • 1-1/2 cups orange juice
  • 3 eggs

Making cupcake batter - Mason Jar Cupcakes Recipe - Delectable Destinations Culinary ToursStart mixing, as soon as you start mixing, start adding oil through the feed tube:
1-1/4 cup oil.  Bake at 350* for 55-60 minutes until done, then cool.

Banana Icing:
  • 2 tablespoon butter
  • 1/4 cup mashed banana
  • 1/4 teaspoon lemon juice
  • 1-1/2 cup confectioners sugar, sifted

Mash banana and add lemon juice; Combine butter and banana and lemon juice then add confectioners sugar until desired consistency.

 

Peanut Butter Icing:

  • 1/2 cup butter
  • 1 cup creamy peanut butter
  • 4 cups confectioners’ sugar
  • 1/3 cup cream
In a large bowl, beat butter and peanut butter until light and fluffy. Slowly beat in 1/2 of the confectioner’s sugar. Mix in 1/4 cup of the cream. Beat in the remaining confectioners’ sugar. If necessary, add a little more cream or milk until the frosting reaches a good spreading consistency.
