GREEN CHUTNEY INDIAN DIP
Ingredients:
Cilantro (2 cups)
Mint Leaves (1/2 cup)
Lemon Juice (2 tbsp)
One Serrano Pepper
Fresh Garlic Cloves (5 pieces)
Spices:
Salt as per taste
Cumin Powder – 1/2 tsp
Powdered Sugar – 2 tsp
Water – as per need
Method:
Mix all the ingredients & blend to a smooth paste
Taste & adjust spices/sweetness
Chill & serve cold
SAMOSA FRIED INDIAN SNACK
Ingredients:
1/2 cup BOILED GREEN PEAS (Peas should be soft but firm)
2 cups BOILED & PEELED POTATOES (Potatoes should be soft & mushy)
High heat tolerance oil (Sunflower/Vegetable) – 2 cups approximately
All-purpose Flour – 2 cups
Water – 1/2 cup
Oil – 2 tbsp
Caraway Seeds – 1 tsp
Spices:
Cumin Seeds – 1 tsp
Smoked Paprika Powder – 1 tsp
Coriander Seeds Powder – 1 tsp
Garam Masala – 2 tsp
Cumin Powder – 1 tsp
Salt as per taste
Method – (dough):
Mix all-purpose flour, a pinch of salt, 1 tbsp oil & 1 tsp caraway seeds & knead to a stiff dough with 1/2 cup water
Refrigerate for 1 hour (to be used later)
Method – (stuffing):
In a flat pan, add the following :
1 tbsp oil and warm-up
Next, add cumin seeds and wait till they splutter
Add boiled peas & let them cook for 1 minute
Add boiled potatoes
Add spices
Mash all together to very smooth
Method – (samosa pastry):
Take a small ball of the dough (golf ball size)
Roll into a circle
Cut the circle from the centre to get a semicircle/half moon
Take 1 half-moon & create into a cone structure
Add 1 spoon of the stuffing & close the pastry. Pleat it well from the edges, so that it doesn’t open when you put it to fry
Heat some oil to very hot. Drop in the samosa & deep fry till medium brown in colour
Serve hot with green sauce
KHEER (Rice Pudding)
Ingredients:
Rice – 1/2 cup
Milk – 4 cups (full fat is preferred)
Sugar – 3 tbsp or as per choice
Saffron Strands – 5/6 strands (OPTIONAL)
2 Nuts as per choice (Almonds/Raisins,/Pistachio/Walnut/Cashew-nuts) Green Cardamon Powder (1 tsp)
Cardamon Powder – 1/2 tsp (OPTIONAL)
Method:
Soak rice in 1 cup water & keep aside for 30 minutes
After 30 minutes,
In a deep pan, boil milk
Add sugar and let it melt
Add the ground rice and mix. Stir every few seconds so that it doesn’t stick in the pan
Once the mixture is thick enough (after about 15 minutes), add 2-3 saffron strands, Nuts (Almonds, Raisins, Pistachio) and let it cook another few minutes
Garnish with some more nuts before serving
The dessert can be served both hot or cold depending on the weather & your preference
