Celebrate Fall, Friends and Thanksgiving!.. In a just a few days I will be off for another culinary trip to the Amalfi Coast and Tuscany with a wonderful new group of eager travel enthusiasts. It’s a time I look the most forward to each year and with each passing day, the excitement and anticipation continues to build. With all of the traveling ahead of me, I am very thankful to have had the past few days to relax and enjoy the Thanksgiving weekend with friends here in Canada. Autumn in Quebec is simply beautiful. The colors, the weather, the food, it’s a time of year I truly cherish. The amazing treats and recipes I experienced this Thanksgiving still resonate with me. Sometimes, the best destinations are in your own backyard!
I’m already thinking ahead of the cuisine we will soon be savoring and I’ll be taking notes so that I can share it with you all upon my return. During this trip to the Amalfi Coast and Tuscany I will be visiting new places, meeting new chefs, and trying out new restaurants…very exciting! There is always a hidden gem to be found and this is just one of the many reasons I love bringing people to this beautiful country.
Before I depart for the days ahead that will be full of amazing food, I wanted to share one local delectable treat that I was lucky to get to experience over the Canadian Thanksgiving holiday. I also want to introduce Jodie’s Kitchen. My dear friend of many years is Jodie, she is an amazing baker and we will continue to visit her kitchen for some truly yummy treats. Likewise, I think it’s important to share and spread goodwill among others through delicious dishes, thus, I’ll be posting recipes like this one in some of my upcoming blogs. As you enjoy the gorgeous beauty of Autumn, here is a recipe I’ve fallen in love with, and I know you will too. This recipe is easy, no fancy appliances needed, just a bowl, measuring cups and a fork. Have fun!
Jodie’s Apple Spice Cake
3-4 apples (sliced thin-medium)
5 tbsp sugar
2 tsp cinnamon
*Prepare and set aside
Dry Ingredients…
3 cups Flour
1 & 3/4 cups sugar
3tsp baking powder
1/4 tsp nutmeg
1/4tsp cinnamon
*Mix together and set aside
Wet Ingredients…
1/4 cup orange juice
2 &1/2 tsp vanilla
1/4 tsp orange rind
4 eggs
1 cup oil
*Mix together
Add wet ingredients to dry ingredients mix well with fork. Fold in prepared apple cinnamon and then put in your favorite baking tube or bundt pan. Bake at 350 for 1 hour and 15 minutes. Let cool and enjoy with your favorite cup of tea or hot apple cider.
